Faerie Spinach Banana Muffins



Looking for something healthy and energizing, but also sweet and tasty to start off your day? I've been loving spinach banana muffins as a morning treat! Recipe originally from The Green Forks, I just topped these with rose petals and some edible glitter stars to make them extra magical!


Ingredients:

  • 2 cups flour

  • 3/4 cup sugar

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 1/2 tsp cinnamon

  • 1/2 tsp salt

  • 1/4 cup oil

  • 3/4 cup milk

  • 6 oz spinach

  • 2 mashed bananas

  • 2 tsp vanilla


Instructions:


Preheat oven to 350°F and line your muffin pans with paper liners.


Whisk together dry ingredients in a large bowl: flours, sugar, baking powder, baking soda, cinnamon, and salt. Set aside.


In a blender, place the wet ingredients: oil, milk, banana, vanilla, and spinach. Blend until completely puréed.


Pour puréed mixture into dry mixture and fold together with a rubber spatula until completely combined.


Fill muffin cups about ⅔ full and bake 18-20 minutes or until a knife comes out clean.
