Kitchen Witch Wednesday: Rosemary Ginger Sugar Cookies


Today's Kitchen Witch Wednesday is going to focus on ginger and rosemary--two powerful assets of a witch's kitchen! Ginger is often used to settle the stomach and dispel nausea. It can even relieve menstrual cramps! As a magical root, eating ginger before performing spells will lend them power. I've mentioned rosemary before when added to an herbal steam, but in food rosemary can help with headaches, migraines, and strengthening your memory. When ingested, it can sooth your nervous system and strengthen your mental powers as a witch.

Today's recipe is my Rosemary Ginger Sugar Cookies!! I love these powerful little cookies and have had some requests for the recipe so I figured it would make a perfect first recipe for my first Kitchen Witch Wednesday. This recipe is quick, easy, and means you can have about 2 dozen delicious cookies in under a half hour!

INGREDIENTS:

- 1 cup butter (2 sticks, softened to room temperature)

- 1 cup brown sugar

- 1 egg

- 1 tsp. vanilla

- 2 2/3 cups flour

- 1 tsp. baking powder

- 1/2 tsp. salt

- 1 tbsp. powdered rosemary

- 1 1/2 tsp. ginger

- granulated sugar for topping

First pre-heat your oven to 350. Line two baking pans with parchment paper.

Mix the butter, brown sugar, egg, and vanilla in one bowl and the dry ingredients in another. Slowly add the dry ingredients to the first bowl, constantly mixing so it has an even consistency.

Scoop out table-spoon-sized balls and place them about an inch apart on the baking pans. Press them flat, lightly, with your palm. Then use a cookie stamp if you'd like. You can also roll the dough out and cut out shapes, but I think it does best as pressed, rough cookies.

Last but not least, sprinkle just a tad of water over-top of the cookies and then sprinkle the sugar on top. The water will help the sugar create a crunchy crust to the tops.

Bake for about 15-20 minutes, let them cool, and then enjoy!
