Kitchen Witch Wednesday: Gluten-Free Lavender Lemon Curd Sandwich Cookies


Today's Kitchen Witch Wednesday is going to focus on lavender! It's one of my absolute favorite herbs to use in kitchen witchery. Not only is it a powerful herb, but it has such a wonderful scent and flavor. And nothing pairs better with lavender than lemon.

Lavender is best known as a calming herb. It relaxes the mind and eases exhaustion. When carried, it protects you from the evil eye and allows you to see spirits. It's also often used in love spells, sleep spells, and purification baths.

My intention with these cookies was to create something delicious, but also soothing for a friend who deserved a little relaxation.

INGREDIENTS: - 1 cup butter (2 sticks, softened to room temperature) - 1 1/3 cup brown sugar - 1 egg - 2 tsp. vanilla - 2 2/3 cups flour (I used a gluten-free flour for this recipe) - 1 tsp. baking powder - 1/2 tsp. salt - 2 tbsp. dried lavender - granulated sugar for topping

- lemon curd for filling (store-bought or homemade) Pre-heat your oven to 350 and line two baking pans with parchment paper. Mix the butter, brown sugar, egg, and vanilla in one bowl and the dry ingredients in another. Slowly add the dry ingredients to the first bowl, constantly mixing so it has an even consistency. Then add in the lavender and mix it thoroughly. Scoop out table-spoon-sized balls and place them about an inch apart on the baking pans. Press them flat with your palm and sprinkle the sugar on top. Bake for about 25 minutes. Once they've cooled, spoon or pipe some lemon curd into the center of one cookie. Add another cookie on top and squeeze it just enough to make them stick together.

Now you have a soothing and delicious cookie to pair with some calming, chamomile tea!
