Kitchen Witch Wednesday: Honey Rose Lemon Cakes

I made these cakes for a friend's going away party because I wanted to make something inspired by her! And since she's bright like lemon, soft like a rose, and sweet like honey--these were the cakes for her!

 

To get that beautiful shape, I used a pan from Nordic Ware called the Honeycomb Pull-Apart Pan!

 

 

 

And actually, the recipe I used was a slight variation of the recipe that came with the pan.

 

Ingredients:

 

Cake:

- 2 2/3 cup flour

- 1 1/2 tsp. baking powder

- 1 tsp. baking soda

- 1/4 tsp. salt

- 1 cup butter, softened 

- 1 1/2 cups sugar

- 4 eggs

- 2 tbsp. finely grated lemon zest

- 1 cup sour cream

- a dash of rose syrup

 

 

Glaze:

- 3 tbsp. Honey

- 1 cup powdered sugar

- 1 tbsp. lemon juice

- 3 tbsp. rose syrup

 

** and then some crushed rose petals and lemon zest for decoration **

 

 

Directions:

 

Mix all the dry ingredients and wet separately, then gradually add the wet to the dry until combined. Make sure the pan you're using is well coated in butter or non-stick baking spray so it will hold the shape better. Then pour the batter in and make sure it's evenly distributed between the cavities. Bake at 325 F for 45-55 minutes -- checking it halfway through to rotate the pan.

 

Once it has cooled, mix together the glaze ingredients. Depending on how you want the cakes to look, you can add more powdered sugar. More will give the glaze a more opaque look. If you leave it a little more wet, it will simply coat the cakes for flavor. 

 

 

Rose, as I've mentioned before, has powers of love, happiness, and psychic awareness. Lemon, similarly brings love and happiness, but also purification. And honey is a grab bag of magical wonders, carrying the powers of purification, health, love, happiness, spirituality, and wisdom. 

 

So these cakes made just the perfect treat for a tender goodbye for a kind friend!
